Greetings, my wife and I just purchased a 2020 Freightliner M2 106 with a 12' box and 12' bed. After converting the box to living quarters (target is one year from now) the plan is to haul my '77 Bronco on the bed and tow her trailered Jeep as we visit various East Coast offroad parks. We are still in the brainstorming phase of our conversion project, so many options!!

Looks like great fun but you're going in a whole other direction from us. I'm responding to make it easy to stay in the loop to see what ideas I may glean from you!
For my conversion, we built a mobile workshop for my model airplanes. A diesel generator plumbed into the mains gives us cold air and lighting. Presently contemplating solar.
Anyway, unlike most everybody else, we don't camp out. I'm into flying model airplanes in a big field with like minded folks - no facilities whatsoever. So our use case is similar to folks who attend NASCAR events and stay in the infield. So gone a long weekend and back home. Main thing beyond toting model airplanes is a place to get in out of the heat and a private place to poop. Food-wise there are usually vendors at the event, but a charcoal grill and sandwich fixings also help get us by.
Point being, our rig is for days, maybe a week at a stretch. And we're near civilization vs boondocking. And we never stay in RV parking so no 30/50A hookups to concern ourselves with, nor the need to dump blackwater. Means air mattress and loveable loo (using kitty litter) are acceptable versus bonafide plumbing and a permanent arrangement of 'furniture'. Think one step up from a pup tent and sleeping bag!
As for onsite wheels, a Harley Sportster fits the bill and is easy to load/unload because of the Tommy Lift with which it's equipped.
Bit more room in our 24' box versus yours, but on the flip side, we don't have the bed. Another advantage is pulling a 5th wheel camper would be a doodle with yours.
