Okay, here's another one for discussion. My rig came with only a regular microwave and no gas oven. We need to bake on the road. So, I took out the microwave, measured it, and went to Sears and bought a convection/microwave of identical dimensions. The cabinet where the micro fits is plenty big on both sides and there is about 10" clearance above it. They had some vented plates mounted across the bottom and top of the oven to keep it in place and allow air to vent around. But, I fired up the convection unit sitting on the open counter and warmed it up for 10 minutes to 400 degrees. It gives off some considerable heat. So, my plan is to line the inside of the cabinet with some sort of heat reflective insulation product. Then I'm going to cut a round hole in the top front of the cabinet above the microwave and mount a 120 volt fan motor on the inside. Then either have a switch on that or temperature controlled to come on when it gets hot so I don't have to remember to turn it on. I think it would be easy to wire in a temp control like they use for attic exhaust fans. By blowing out the hot air at the top of the cabinet it will draw in cooler air along the bottom front of the oven. Then I can turn on the roof fantastic fan that is right there above it on the ceiling. What do you guys think of this plan? Am I missing something?
